Ingredients
- 1 c. regular long grain rice or 3 c. cold cooked rice
- 6 large eggs
- 1/4 lb. cooked ham, diced
- 1 Tbsp. chopped green onion
- 1/2 tsp. salt
- 1/2 c. frozen peas, thawed
- salad oil
Method
- Prepare rice.
- Beat eggs with salt in bowl.
- Set aside.
- In 12-inch nonstick skillet over medium heat in 2 tablespoons of hot oil, gently stir rice until rice is well coated with oil.
- Push rice to one side of skillet.
