Ingredients

  • 2 medium baking potatoes, unpeeled (1 lb.)
  • 2 tsp. olive oil
  • vegetable cooking spray
  • 1 tsp. dried whole oregano
  • 1/4 tsp. pepper
  • 1/8 tsp. salt
  • 2 Tbsp. malt vinegar

Method

  • Scrub potatoes. Cut each lengthwise into 8 wedges.
  • Place wedges in a bowl with cold water. Let stand 30 minutes.
  • Drain. Pat dry with paper towels.
  • Toss potatoes with oil.
  • Place skin side down on a baking sheet coated with cooking spray.
  • Combine oregano, pepper and salt.
  • Sprinkle evenly over potatoes. Bake at 400° for 50 minutes or until potatoes are tender and browned. Remove from oven and sprinkle with vinegar.
  • Serve oven fries immediately.
  • Yields 4 servings.
