Ingredients
- 2 medium baking potatoes, unpeeled (1 lb.)
- 2 tsp. olive oil
- vegetable cooking spray
- 1 tsp. dried whole oregano
- 1/4 tsp. pepper
- 1/8 tsp. salt
- 2 Tbsp. malt vinegar
Method
- Scrub potatoes. Cut each lengthwise into 8 wedges.
- Place wedges in a bowl with cold water. Let stand 30 minutes.
- Drain. Pat dry with paper towels.
- Toss potatoes with oil.
- Place skin side down on a baking sheet coated with cooking spray.
- Combine oregano, pepper and salt.
- Sprinkle evenly over potatoes. Bake at 400° for 50 minutes or until potatoes are tender and browned. Remove from oven and sprinkle with vinegar.
- Serve oven fries immediately.
- Yields 4 servings.
