Ingredients

  • 2 lbs. red snapper or possibly sole fillets
  • 1/3 c. extra virgin olive oil
  • Flour seasoned with salt & pepper
  • 3 cloves garlic, chopped
  • 1/2 teaspoon rosemary
  • 1/2 c. white wine vinegar

Method

  • Dip fish in seasoned flour, coating both sides.
  • Heat the oil in large frying pan and fry the fish, turning to brown on both sides.
  • Remove to a warm platter.
  • Drain off excess oil from pan; add in garlic, rosemary and vinegar.
  • Bring to a boil and let simmer a few min.
  • Pour mix over the fish, serve warm.
