Ingredients

  • 16 ounces, weight Alphabet Shaped Pasta
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 whole Lemons, Zested
  • 1 Tablespoon Balsamic Vinegar
  • 1 can (32 Oz) Diced Tomatoes
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1 bag (10 Oz) Baby Spinach
  • 8 ounces, weight Feta Cheese, Crumbled

Method

  • Cook the pasta in boiling salted water according to package instructions.
  • Then drain it and set aside.
  • In the same pot (but off the heat), add the garlic, olive oil, lemon zest, vinegar, tomatoes, salt and pepper.
  • Add the cooked and drained pasta and the spinach and place back over low/medium heat and cook just until the spinach wilts.
  • Remove stoup from stove and add the feta.
  • Garnish with an additional drizzle of olive oil if desired.
