Ingredients

  • 1 whole chicken cut up OR chicken thighs and breasts
  • 1/2 of a 6oz. jar marinated artichokes hearts
  • 2/3 cup extra virgin olive oil
  • 3 Tbl. good quality red or white vinegar
  • 2 Tbl. dried oregano (preferably greek)
  • 1 Tbl. greek seasonings (Cavender's all-purpose greek seasoning)
  • 1 whole lemon halved-juice 1/2 juice and pulp 1/2

Method

  • Place all ingredents EXCEPT chicken into processor and process into paste-like sauce. place chicken in a plastic bag or non-reactive bowl and cover with marinade, throughly coating each piece. let stand while your grill coals get to grilling temperature OR the oven reaches 375. place chicken pieces on grill or in large oven broiler pan skin side down grill or bake 10 minutes. Turn pieces and continue cooking till all juices run clear and chicken is cooked through. approx. 25 min. in oven 20 minutes on a barbeque grill.
