Ingredients
- 12 medium red potatoes
- 12 eggs
- 1/2 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon chives, chopped
- 2 teaspoons paprika
Method
- Hard boil the 12 eggs and separate the egg yolks.
- In a separate pan, boil the red potatoes until tender. Let cool while assembling the filling.
- Separate the egg yolks from the whites and mash in a bowl with a fork.
- Add the mayonnaise, Dijon mustard and season with salt & pepper. Stir well to combine.
- Put the egg yolk mixture into a piping bag and let chill.
- Cut the potatoes in half length wise. Scoop out a small well for the filling, about a tea-spoon size.
- Pipe the yolk filling into the potato. Top with paprika and chives to taste.
