Ingredients

  • 1 grapefruit
  • 1 1/4 cups sugar
  • 3 eggs
  • 3 3/8 tablespoons milk
  • 6 3/4 tablespoons oil
  • 1 5/8 cups self-rising flour

Method

  • Turn on the oven to 180 degrees Celsius.
  • Peel half the grapefruit, cut in four pieces, and blend in the blender together with the sugar.
  • Then add the eggs, milk, oil, and blend some more.
  • Remove to a bowl.
  • Gradually add the flour to the mixture, stirring, and mixing well.
  • Pour into small silicone muffin cups, and bake for about 20 minutes.
