Ingredients

  • 4 artichokes
  • 3/4 c. grated Parmesan cheese
  • 1 clove garlic, chopped
  • 3/4 c. bread crumbs
  • 1 tbsp. minced parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Extra virgin olive oil

Method

  • Wash artichokes and cut off ends of leaves.
  • Cut off the stem proportionately, so artichokes will be able to sit upright.
  • Open artichokes by hitting on a hard surface.
  • In a medium mixing bowl, mix bread crumbs, cheese, garlic, parsley, salt and pepper together.
  • With a spoon, pour the mix into the open leaves, then sprinkle extra virgin olive oil over all till just moist.
  • Stand the artichoke upright in a large pot, and add in an inch or possibly so of water.
  • Cover pot and steam 30-40 min or possibly till a leaf comes off easily.
