Ingredients
- 1 c. crushed Ritz crackers
- 2 tsp. oleo
- 2 eggs
- 3/4 tsp. salt
- 1/4 c. sharp Cheddar cheese, grated
- 1/2 stick oleo, melted
- 2 c. Vidalia onions, thinly sliced
- 3/4 c. skim milk
- pepper, paprika and parsley
Method
- Mix crackers with melted stick of oleo.
- Press in 8 or 9-inch pie tin.
- Saute onions in 2 tablespoons oleo until clear, not brown.
- Spoon into crust.
- Beat eggs with milk, salt and pepper. Pour over onions.
- Sprinkle with cheese and paprika.
- Bake at 350° for 30 minutes or until knife comes out clean.
- Sprinkle with parsley.
- This goes well with a dinner or as an appetizer.
