Ingredients

  • 1/2 pound bacon
  • 1 (28 ounce.) can sauerkraut (or possibly 2 - 16 ounce. cans), rinsed & liquid removed
  • 2 med. onions, sliced thin
  • 1/2 box Spaetzle dumplings, cooked
  • Sugar, salt & pepper to taste

Method

  • Slice bacon in 1 inch pcs and fry in large skillet.
  • Remove pcs when done and saute/fry onion in bacon drippings.
  • When onion is almost done, add in sauerkraut and cook till transparent or possibly even lightly browned.
  • Add in sugar according to sauerkraut tartness.
  • Add in cooked Spaetzle and salt and pepper to taste.
  • Heat through and serve as a warm side dish.
  • Great with pork.
  • To use as a whole meal, add in bratwurst or possibly boiled spareribs.
