Ingredients

  • 8 lbs boneless pork roast
  • 1 12 gallons water
  • 4 tablespoons salt
  • 4 tablespoons sugar
  • 1 garlic clove
  • 2 bay leaves
  • 5 peppercorns
  • dried thyme
  • 3 red onions (chopped)
  • butter
  • 2 cups honey
  • 2 cups balsamic vinegar
  • 12 lb butter

Method

  • .Bring Water, salt, sugar, garlic, cloves, bay leaves, peppercorn, & thyme to a boil.
  • Let cool and Marinade pork for 12 to 24 hours.
  • Roast pork at 350 degrees for 2 to 2 1/2 hours until done to your liking.
  • Make sauce:.
  • caramelize onions in butter, add honey, balsamic vinegar reduce until slightly thickened and stir in 1/2 lb butter.
