Ingredients

  • Pastry Shells:
  • 6 c. unsifted pastry flour
  • 2.5 c. salt
  • 2 c. shortening or butter
  • Filling:
  • 1 c. brown sugar
  • 0.25 c. butter, softened
  • 0.125 c. chopped pecans
  • 0.125 c. shredded coconut
  • 0.5 tsp vanilla
  • 1 egg
  • 1 c. butterscotch chipits

Method

  • Preheat oven to 375 F.
  • To made the pastry shells:
  • Sift flour and salt together.
  • Cut shortening or butter in dry ingredients until mixture looks like fine oatmeal.
  • Chill until read to use.
  • Roll pastry dough out on floured surface
  • Use circular cookie cutter or glass to cut out circular crusts.
  • Put crusts in bottom of greased or non-stick muffin tin.
  • To make filling:
  • Beat sugar, butter, egg and vanilla together.
  • Add pecans, coconut and butterscotch chipits
  • Fill shells 2/3 full. Top with pecan halves or chopped pecans.
  • Bake 15 to 20 minutes, or until golden brown.
