Ingredients

  • 4 very ripe bananas, pureed
  • 2/3 cup buttermilk
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 cups sugar
  • 3/4 cup butter
  • 2 eggs
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Vanilla, chocolate or your special frosting

Method

  • Cream butter, sugar and eggs by beating together until fluffy and light in color. Set aside.
  • In separate bow, beat together banana puree, buttermilk and vanilla until well mixed. Set aside.
  • Sift together flour, baking soda, baking powder and salt. Add flour mixture to puree alternately with egg mixture, beating each time until well blended.
  • Pour into buttered and floured cake pans. Bake at 350 degrees until wood pick inserted in center comes out clean, 40 to 50 minutes. Cool thoroughly in pan.
  • Frost with desired frosting and serve.
