Ingredients

  • 6 oz. olive oil
  • 4 1/2 oz. papaya pulp
  • 3 shallots, diced
  • 2 cloves garlic, chopped
  • 2 1/2 oz. roasted sesame seed
  • 2 1/2 bunches cilantro (leaves)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 6 oz. balsamic vinegar
  • 4 (7 to 8 oz.) chicken breasts which have been marinated in olive oil, garlic, ginger and orange juice

Method

  • Heat olive oil and pour over all ingredients (except chicken breasts).
  • Mix all ingredients in a bowl.
  • Grill chicken breasts over medium heat until fork-tender and moist.
  • Garnish with sauce. Serve with your favorite grilled vegetables.
