- 6 oz. olive oil
- 4 1/2 oz. papaya pulp
- 3 shallots, diced
- 2 cloves garlic, chopped
- 2 1/2 oz. roasted sesame seed
- 2 1/2 bunches cilantro (leaves)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 6 oz. balsamic vinegar
- 4 (7 to 8 oz.) chicken breasts which have been marinated in olive oil, garlic, ginger and orange juice
Method
- Heat olive oil and pour over all ingredients (except chicken breasts).
- Mix all ingredients in a bowl.
- Grill chicken breasts over medium heat until fork-tender and moist.
- Garnish with sauce. Serve with your favorite grilled vegetables.
