Ingredients
- 6 medium potatoes, cooked, cooled, peeled and shredded
- 1 to 2 c. shredded Cheddar cheese
- 1/4 c. butter
- 1 1/2 c. sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. finely grated green onion
- 2 Tbsp. butter
- paprika
Method
- Combine cheese and 1/4 cup butter in saucepan; stir over low heat until almost melted.
- Remove from heat.
- Blend in sour cream, seasonings and 2 green onions.
- Fold in potatoes.
- Turn into greased 2-quart casserole.
- Dot with remaining butter and sprinkle with paprika.
- Bake at 350°, uncovered, for 35 minutes.
