Ingredients

  • 6 medium potatoes, cooked, cooled, peeled and shredded
  • 1 to 2 c. shredded Cheddar cheese
  • 1/4 c. butter
  • 1 1/2 c. sour cream
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. finely grated green onion
  • 2 Tbsp. butter
  • paprika

Method

  • Combine cheese and 1/4 cup butter in saucepan; stir over low heat until almost melted.
  • Remove from heat.
  • Blend in sour cream, seasonings and 2 green onions.
  • Fold in potatoes.
  • Turn into greased 2-quart casserole.
  • Dot with remaining butter and sprinkle with paprika.
  • Bake at 350°, uncovered, for 35 minutes.
