Ingredients

  • Salad:
  • 2 hearts romaine, torn
  • 1 tomato, diced
  • 3/4 c. corn
  • 2 green onions, diced
  • 6 mini-peppers, or 1 red or orange bell pepper, sliced
  • 2 tbsp cilantro, chopped
  • 1/2 bag pre-cooked chicken breast strips, or 2 c. cooked chicken
  • Dressing:
  • 1/2 firm-ripe California avocado, quartered, pitted, and peeled
  • 1/2 c. fat-free yogurt
  • 2-3 tbsp fresh lime juice
  • 1 garlic clove, finely chopped
  • 3/4 teaspoons salt
  • 1/4 teaspoon black pepper

Method

  • Combine all salad ingredients. Blend all dressing ingredients and add 1 tbsp (or more) water to reach desired consistency. Enjoy guilt-free!
