Ingredients

  • 4 baked potatoes
  • 1 c. grated raw carrots
  • 1/4 c. chopped fresh parsley
  • 1/4 c. minced onion or chives
  • 1/2 tsp. horseradish
  • 2/3 c. plain yogurt or sour cream
  • 1/4 c. melted butter or margarine
  • salt and pepper to taste
  • grated Parmesan or Cheddar cheese
  • paprika

Method

  • Halve baked potatoes and scoop out pulp.
  • Whip pulp with carrots, parsley, chives, horseradish, yogurt and butter.
  • Season to taste with salt and pepper.
  • Refill potato halves.
  • Top with grated cheese and paprika.
  • Bake in a 350° oven for 15 minutes, or until cheese melts and mixture is hot.
