Ingredients
- 4 baked potatoes
- 1 c. grated raw carrots
- 1/4 c. chopped fresh parsley
- 1/4 c. minced onion or chives
- 1/2 tsp. horseradish
- 2/3 c. plain yogurt or sour cream
- 1/4 c. melted butter or margarine
- salt and pepper to taste
- grated Parmesan or Cheddar cheese
- paprika
Method
- Halve baked potatoes and scoop out pulp.
- Whip pulp with carrots, parsley, chives, horseradish, yogurt and butter.
- Season to taste with salt and pepper.
- Refill potato halves.
- Top with grated cheese and paprika.
- Bake in a 350° oven for 15 minutes, or until cheese melts and mixture is hot.
