Ingredients

  • 6 medium potatoes, cooked with skins
  • 1 can Cheddar cheese soup
  • 1/4 c. butter
  • 2 c. sour cream
  • 1/3 c. chopped green onions
  • 2 Tbsp. butter (to dot on top)
  • 1 1/2 c. Cheddar cheese (optional)
  • corn flakes (optional)

Method

  • Peel and grate potatoes into a large bowl with onions and grated cheese.
  • Heat can of Cheddar cheese soup with 1/4 cup butter until melted.
  • Remove and blend in sour cream.
  • Add to potatoes and stir lightly.
  • Cook in a buttered casserole dish. Dot with butter.
  • Sprinkle corn flakes over top.
  • Bake 45 minutes at 350°.
