Ingredients
- 6 medium potatoes, cooked with skins
- 1 can Cheddar cheese soup
- 1/4 c. butter
- 2 c. sour cream
- 1/3 c. chopped green onions
- 2 Tbsp. butter (to dot on top)
- 1 1/2 c. Cheddar cheese (optional)
- corn flakes (optional)
Method
- Peel and grate potatoes into a large bowl with onions and grated cheese.
- Heat can of Cheddar cheese soup with 1/4 cup butter until melted.
- Remove and blend in sour cream.
- Add to potatoes and stir lightly.
- Cook in a buttered casserole dish. Dot with butter.
- Sprinkle corn flakes over top.
- Bake 45 minutes at 350°.
