- 1 1/2 cups brown rice, uncooked
- 2 teaspoons vegetable oil
- 2 garlic cloves, minced
- 1 1/2 teaspoons grated ginger
- 1/2 teaspoon turmeric
- 1/4 teaspoon salt
- 2 1/2 cups water
- 1 (12 ounce) can of sweet pineapple chunks, drained
- 1/4 cup minced fresh cilantro
- 1/2 cup toasted almond
Method
- Saute oil, garlic, ginger, turmeric, salt and rice for about two minutes.
- Stir to prevent sticking.
- Add water and bring to a boil.
- Once the water boils simmer for 45 minutes until all the water is absorbed.
- Stir in pineapple, cilantro and slivered almonds.
