Ingredients
- 1/2 c. butter or margarine
- 1/2 c. toasted blanched almonds
- 2/3 c. firmly packed light brown sugar
- 1 c. orange juice
- 3 (1 lb.) cans yams, drained
- 1 tsp. salt
- 1 orange, peeled and sectioned
Method
- In saucepan, melt butter or margarine.
- Add almonds, brown sugar and orange juice; simmer, stirring occasionally, for 5 minutes.
- Add yams; sprinkle with salt.
- Simmer 10 to 15 minutes, spooning sauce over frequently.
- Garnish with orange sections. Makes about 8 to 10 servings.
