Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1/2 cup butter
  • 1 1/4 cups rice flour
  • 1/4 cup tapioca starch
  • 1/2 cup potato starch
  • 2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 1 cup plain yogurt
  • 1 teaspoon vanilla

Method

  • Preheat oven to 350 degress. Beat eggs and sugar until fluffy and lemon yellow. Add butter and mix.
  • Mix dry ingredients, add to egg mixture, and stir to combine.
  • Mix in yogurt and vanilla.
  • Bake 45 minutes for 9x13, 30-35 minutes for two round 9" layer pans, or 15-20 minutes for cupcakes.
  • Note: Rice flour from the Asian market is recommended, as it's ground much finer and results in better texture for baked goods.
