Ingredients

  • 1/4 cup warm water
  • 1 teaspoon yeast
  • 2 tablespoons raw sugar (divided)
  • 1 cup Mama's Almond Blend Flour
  • 1 cup millet flour
  • 1 cup brown rice flour
  • 1/2 teaspoon sea salt
  • 1 tablespoon sweet dairy whey
  • 2 teaspoons xanthan gum
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 egg, room temperature
  • 1 cup buttermilk
  • 1/2 dropper Vanilla Creme liquid stevia
  • poppy or sesame seeds for top

Method

  • Put warm water in a mixer bowl, sprinkle on yeast. Take 1 teaspoon of the sugar, sprinkle that over the yeast. Leave the mixture to proof.
  • Mix flours, rest of the sugar, salt, whey, baking soda and baking powder. Pour mixture in on the proofed yeast. Add egg, buttermilk, and stevia. Mix on medium-low speed until it is completely mixed and about the consistency of biscuit dough. Lightly grease a terracotta baking pot or a cloche. Cut the dough into eight pieces (or as desired), roll each piece into a ball and arrange decoratively. Make a slash in the top of each ball. Place the top of the pot or cloche on, and set aside in a warm, draft-free spot to rise for one hour (it won't rise a lot, but the flavor of the yeast will develop). Meanwhile preheat oven to 375 degrees. After the rising time, dough may be glazed with beaten egg or milk if desired. Sprinkle with seeds if desired. Bake for 35-40 minutes, until a knife inserted in the middle comes out clean. Cool on a rack covered with an unnapped towel.
