Ingredients

  • 2 lbs pearl onions
  • 1 cup sherry
  • 1/2 cup raisins
  • 1/4 cup honey
  • 1/4 water
  • 1/4 stick butter
  • 1 tsp minced thyme
  • 2/3 cup toasted almonds
  • 1 tlb sherry/red wine vinegar

Method

  • Boil onions 3 min in order to slip out of skins.
  • Combine onions with all ingredients except almonds and vinegar. Bring to boil then simmer, covered, about an hour, until carmelized. Stir often.
  • Remove from heat.
  • When ready to serve reheat and add almonds and vinegar. Add a little water if too thick.
