Ingredients
- 2 lbs pearl onions
- 1 cup sherry
- 1/2 cup raisins
- 1/4 cup honey
- 1/4 water
- 1/4 stick butter
- 1 tsp minced thyme
- 2/3 cup toasted almonds
- 1 tlb sherry/red wine vinegar
Method
- Boil onions 3 min in order to slip out of skins.
- Combine onions with all ingredients except almonds and vinegar. Bring to boil then simmer, covered, about an hour, until carmelized. Stir often.
- Remove from heat.
- When ready to serve reheat and add almonds and vinegar. Add a little water if too thick.
