Ingredients

  • one bunch fresh beet
  • two orange
  • one tablespoon sugar
  • one tablespoon ginger
  • one tablespoon cornstarch
  • water

Method

  • Clean, peel, and slice beets.
  • Place the beets in a large pot.
  • Add the ginger, sugar, zest , and juice from one of the oranges.
  • Cover the beets with water and bring to a boil.
  • Reduce heat and simmer for one hour.
  • Add more water as needed.
  • Mix the cornstarch with 1/4 cup of cold water and add it to the beets during the last five minutes of simmering.
  • Let the beets cool.
  • Peel and section the second orange.
  • Add the orange to the beet mixture.
  • Stir to coat.
  • Serve well-chilled.
