Ingredients

  • 2 c. whole wheat flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. other spices (cinnamon, cloves, nutmeg, allspice, any combination you like)
  • 1/2 c. yogurt or buttermilk
  • 2 eggs
  • about 1/2 c. applesauce or some nuts or raisins (optional)

Method

  • Beat the molasses mixture a minute or so, then pour it into the flour mixture.
  • Stir it just until you can't see any more flour.
  • Butter (grease) an 8 or 9-inch square baking pan.
  • Pour the batter into it and bake about 30 minutes.
