Ingredients

  • 1 1/2 teaspoons finely grated fresh ginger
  • 1 teaspoon tamari soy sauce
  • 2 tablespoons rice wine vinegar
  • Coarse salt and freshly ground pepper
  • 1/4 cup plus 2 tablespoons sunflower or safflower oil
  • Thinly sliced scallions (optional)

Method

  • WHISK TOGETHER ginger, tamari, vinegar, and salt and pepper to taste in a bowl, then gradually whisk in oil, adding it in a slow, steady stream, and continue whisking until mixture is emulsified.
  • Stir in scallions, if desired.
