Ingredients

  • 3 c. carrots, cut in 1/4-inch slices (about 6 medium)
  • 1/2 c. water
  • 1/2 c. apple juice
  • 2 tsp. margarine
  • 1 tsp. ground ginger
  • 1 Tbsp. lemon juice
  • 2 tsp. packed brown sugar

Method

  • Cook all ingredients except lemon juice and brown sugar in a 10-inch skillet over medium heat for 12 to 15 minutes, stirring occasionally, until all liquid has evaporated.
  • Reduce heat to medium-low.
  • Stir in lemon juice and brown sugar.
  • Cook 5 minutes, stirring occasionally until carrots are glazed.
  • Low-fat and low-cholesterol.
