Ingredients

  • 1 1/2 lb. ground pork
  • 2 oz. bread crumbs
  • 1 egg
  • 1 Tbsp. Worcestershire
  • 1 1/2 Tbsp. mustard
  • 1/4 tsp. salt
  • 1/4 tsp. sage
  • 3 oz. gherkin pickles
  • 2 oz. pimentos
  • 1 1/2 Tbsp. pickle juice
  • 1/4 tsp. coarse ground pepper

Method

  • Combine pork and bread crumbs.
  • Beat egg, Worcestershire, mustard, salt and sage together.
  • Coarsely chop pickles and pimentos.
  • Add juice and ground pepper and gently mix all ingredients together.
  • Pack into loaf pan.
  • Bake in water bath at 350° for 1 1/2 hours.
  • Serve with crackers and mustard.
