- 1 1/2 lb. ground pork
- 2 oz. bread crumbs
- 1 egg
- 1 Tbsp. Worcestershire
- 1 1/2 Tbsp. mustard
- 1/4 tsp. salt
- 1/4 tsp. sage
- 3 oz. gherkin pickles
- 2 oz. pimentos
- 1 1/2 Tbsp. pickle juice
- 1/4 tsp. coarse ground pepper
Method
- Combine pork and bread crumbs.
- Beat egg, Worcestershire, mustard, salt and sage together.
- Coarsely chop pickles and pimentos.
- Add juice and ground pepper and gently mix all ingredients together.
- Pack into loaf pan.
- Bake in water bath at 350° for 1 1/2 hours.
- Serve with crackers and mustard.
