Ingredients
- 6 large potatoes
- 3 tsp. minced onion
- 3 tsp. wine vinegar
- 1 1/2 c. diced celery
- 1 tall (No. 2) can ripe olives
- 6 Tbsp. chopped parsley
- 1 c. mayonnaise
Method
- Wash potatoes.
- Boil potatoes in peeling, then drain and cube. Add 3 teaspoons salt, 6 tablespoons minced onion and 3 teaspoons wine vinegar to warm potatoes and let stand in refrigerator for 1 hour.
- Add celery, olives, parsley and mayonnaise.
