Ingredients
- 2 lbs. cooked potato
- 4 strips of bacon, minced
- 1/4 c. each of minced onion and celery
- 1/4 c. vegetable stock
- 1/2 c. vinegar
- 1/2 tsp. each of sugar, dill weed and salt
- 1/8 tsp. paprika
- 1/4 tsp. dry mustard
Method
- Cook potatoes in skins till tender.
- Peel and slice while hot. Heat bacon in a skillet and add the onion and celery.
- Saute till golden.
- Heat the stock and remaining ingredients to boiling. Add all ingredients together and gently stir the potatoes.
- Serve immediately with chopped fresh parsley.
- Leftovers can be served chilled.
