Ingredients

  • 2 lbs. cooked potato
  • 4 strips of bacon, minced
  • 1/4 c. each of minced onion and celery
  • 1/4 c. vegetable stock
  • 1/2 c. vinegar
  • 1/2 tsp. each of sugar, dill weed and salt
  • 1/8 tsp. paprika
  • 1/4 tsp. dry mustard

Method

  • Cook potatoes in skins till tender.
  • Peel and slice while hot. Heat bacon in a skillet and add the onion and celery.
  • Saute till golden.
  • Heat the stock and remaining ingredients to boiling. Add all ingredients together and gently stir the potatoes.
  • Serve immediately with chopped fresh parsley.
  • Leftovers can be served chilled.
