Ingredients

  • 3 whole Eggs
  • 1 cup Milk
  • 1/4 teaspoons Nutmeg
  • 1 pinch Salt
  • 1 pinch Pepper
  • 3 cups Flour
  • 1 Tablespoon Butter
  • 1/4 cups Chopped Onions
  • 1/2 cups Shredded Swiss Cheese

Method

  • In a medium sized bowl, beat eggs and milk together with a fork.
  • Add nutmeg, salt and pepper.
  • Slowly add flour a little at a time and mix with a fork.
  • Once all of the flour is added, dough should be elastic.
  • Let it stand for 5 minutes while bringing a 3-quart pot filled with water (2/3 full) to boil.
  • Set your spatzle maker right next to your pot of water.
  • Add dough to your spatzle maker and press it through.
  • Let the dough hang and drop into the water (be patient, it will fall off by itself, no need to cut it off).
  • When noodles rise to the top, they are done.
  • Strain well with a straining spoon and drop into a bowl.
  • Heat butter in a large skillet over medium heat.
  • Add chopped onions and saute for 7 minutes.
  • Add spatzle into the onions and mix to combine.
  • Sprinkle Swiss cheese on top.
  • Stir until all cheese is melted.
