Ingredients
- 3 whole Eggs
- 1 cup Milk
- 1/4 teaspoons Nutmeg
- 1 pinch Salt
- 1 pinch Pepper
- 3 cups Flour
- 1 Tablespoon Butter
- 1/4 cups Chopped Onions
- 1/2 cups Shredded Swiss Cheese
Method
- In a medium sized bowl, beat eggs and milk together with a fork.
- Add nutmeg, salt and pepper.
- Slowly add flour a little at a time and mix with a fork.
- Once all of the flour is added, dough should be elastic.
- Let it stand for 5 minutes while bringing a 3-quart pot filled with water (2/3 full) to boil.
- Set your spatzle maker right next to your pot of water.
- Add dough to your spatzle maker and press it through.
- Let the dough hang and drop into the water (be patient, it will fall off by itself, no need to cut it off).
- When noodles rise to the top, they are done.
- Strain well with a straining spoon and drop into a bowl.
- Heat butter in a large skillet over medium heat.
- Add chopped onions and saute for 7 minutes.
- Add spatzle into the onions and mix to combine.
- Sprinkle Swiss cheese on top.
- Stir until all cheese is melted.
