Ingredients

  • 1 1/4 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. coconut
  • 1/3 c. sugar
  • 3 Tbsp. butter or margarine
  • 1 egg
  • 1/2 c. milk
  • 1 tsp. vanilla extract
  • 3 c. peeled, sliced apples
  • 1/2 c. raisins
  • 1/2 c. chopped nuts (almonds)
  • 2 Tbsp. sugar
  • 1 tsp. cinnamon
  • 3 oz. cream cheese, softened
  • 1/4 c. sugar
  • 2 Tbsp. lemon juice
  • 2 egg yolks

Method

  • In a small mixer bowl, combine flour, baking powder, salt, coconut and 1/3 cup sugar.
  • Cut in butter (soft) with blender until consistency of oatmeal.
  • Stir in egg, milk and vanilla extract. Spread as dough in bottom of buttered 11-inch pie plate.
  • Toss apples, raisins, nuts, 2 tablespoons sugar and cinnamon together; then place evenly on top of batter in pie plate.
  • In a small bowl, cream together cream cheese and 1/4 cup sugar.
  • Add lemon juice and egg yolks; beat until smooth.
  • Pour this topping evenly over apples.
  • Bake at 375° for 30 to 40 minutes.
  • Serve warm, topped with whipped cream or ice cream, if so desired.
  • Makes approximately 10 servings.
