- 1 1/4 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. coconut
- 1/3 c. sugar
- 3 Tbsp. butter or margarine
- 1 egg
- 1/2 c. milk
- 1 tsp. vanilla extract
- 3 c. peeled, sliced apples
- 1/2 c. raisins
- 1/2 c. chopped nuts (almonds)
- 2 Tbsp. sugar
- 1 tsp. cinnamon
- 3 oz. cream cheese, softened
- 1/4 c. sugar
- 2 Tbsp. lemon juice
- 2 egg yolks
Method
- In a small mixer bowl, combine flour, baking powder, salt, coconut and 1/3 cup sugar.
- Cut in butter (soft) with blender until consistency of oatmeal.
- Stir in egg, milk and vanilla extract. Spread as dough in bottom of buttered 11-inch pie plate.
- Toss apples, raisins, nuts, 2 tablespoons sugar and cinnamon together; then place evenly on top of batter in pie plate.
- In a small bowl, cream together cream cheese and 1/4 cup sugar.
- Add lemon juice and egg yolks; beat until smooth.
- Pour this topping evenly over apples.
- Bake at 375° for 30 to 40 minutes.
- Serve warm, topped with whipped cream or ice cream, if so desired.
- Makes approximately 10 servings.
