Ingredients
- 2 (16 oz.) cans sweet potatoes
- 1/2 c. margarine or butter
- 1 small (8 oz.) can crushed pineapple including juice
- 3 eggs
- 1 c. brown sugar
- 1/4 c. milk
- 1 large jar crunchy peanut butter
Method
- Combine first 6 ingredients and beat until fluffy.
- Put 3/4 of potato mixture in a 13 x 9-inch casserole.
- Cover with peanut butter, then top with remaining potatoes.
- Bake at 375° for 30 minutes or until center is firm.
