Ingredients

  • 2 cups Water
  • 2 cups Lentils
  • 1 Tablespoon Garlic Powder
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Tomato Paste
  • 2 whole Shallots
  • 1 head Roasted Garlic
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 3 stalks Celery
  • 3 spears Carrots
  • 4 cubes Chicken Or Vegetable Stock

Method

  • Here's what you'll need: stockpot, saucepan, and a strainer. Prep time is 1 1/2 hours.
  • In a sauce pan add water, lentils and garlic powder. Bring to a boil, drain and set aside. In your stockpot, add olive oil and tomato paste, heat for 2 minutes, then add chopped shallots, roasted garlic, salt and pepper, browning for 10 minutes. Prepare the celery and carrots by cutting into small pieces; add to stock pot to sear along with the olive oil, shallots and garlic for 5 minutes.
  • Take the lentils (do not rinse), add to the stock pot and allow to heat with the veggies and oil for 2 to 3 minutes so lentils absorb all the flavors. Finally, add the chicken stock, mixing all the ingredients. Simmer for 45 minutes and serve.
