Ingredients
- 2 cups Water
- 2 cups Lentils
- 1 Tablespoon Garlic Powder
- 2 Tablespoons Olive Oil
- 2 Tablespoons Tomato Paste
- 2 whole Shallots
- 1 head Roasted Garlic
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 3 stalks Celery
- 3 spears Carrots
- 4 cubes Chicken Or Vegetable Stock
Method
- Here's what you'll need: stockpot, saucepan, and a strainer. Prep time is 1 1/2 hours.
- In a sauce pan add water, lentils and garlic powder. Bring to a boil, drain and set aside. In your stockpot, add olive oil and tomato paste, heat for 2 minutes, then add chopped shallots, roasted garlic, salt and pepper, browning for 10 minutes. Prepare the celery and carrots by cutting into small pieces; add to stock pot to sear along with the olive oil, shallots and garlic for 5 minutes.
- Take the lentils (do not rinse), add to the stock pot and allow to heat with the veggies and oil for 2 to 3 minutes so lentils absorb all the flavors. Finally, add the chicken stock, mixing all the ingredients. Simmer for 45 minutes and serve.
