Ingredients

  • 1 pound clams
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 shallot large, finely sliced
  • 2 tablespoons butter
  • 2 ounces white wine
  • 1 tablespoon lemon juice

Method

  • Rinse clams and discard any clams that are broken.
  • Preheat large, non-stick skillet over medium heat with olive oil. Add shallots and cook for 4 - 5 minutes until tender.
  • Add garlic, wine and butter. Saute until butter is melted.
  • Add clams and cook another 4 - 5 minutes until clams open.
  • Discard any clams that didn't open, and add fresh squeezed lemon.
