Ingredients
- 1 medium onion, chopped
- 1 Tbsp. diet oleo
- 3 medium potatoes, diced
- 3 medium carrots, sliced
- 1 medium stalk celery, sliced
- 2 Tbsp. parsley
- 4 chicken bouillon cubes
- salt
- dash of pepper
Method
- In large heavy nonstick kettle or Dutch oven, cook onion in oleo.
- Add remaining ingredients and 5 cups water.
- Cover and simmer 40 minutes or until vegetables are tender.
