Ingredients

  • 1 cup Dried Cherries
  • 1/2 cups Flaked Coconut
  • 1/2 cups Canola Oil
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Flour
  • 1 teaspoon Baking Soda
  • 1/4 cups Dark Brown Sugar
  • 1 pinch Vanilla Salt

Method

  • Preheat oven to 350 degrees F.
  • Pop all of your ingredients into a bowl and stir until combined. (I know you should separate and do this more carefully but I was sick and figured this type of recipe could withstand haphazard ingredient tossing. I was so right, worked perfectly!)
  • Pour into a greased 10-inch cast iron pan and smooth out.
  • Stick it in the oven for 20 to 25 minutes.
  • Remove from oven and let cool.
  • Serve with a smile.
