Ingredients

  • 4 c. cooked chicken, cut into cubes
  • 3/4 c. finely diced celery or 2 tsp. celery seed
  • 1 1/4 c. seedless grapes, halved
  • 1 1/4 c. apples, diced in small cubes with peeling
  • 1/3 c. sliced or slivered almonds
  • 1 small carton nonfat vanilla yogurt
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1 small can pineapple tidbits

Method

  • Cook chicken and cut into small cubes.
  • In large mixing bowl combine all ingredients until thoroughly coated with yogurt.
  • Use scoop to spoon onto lettuce leaves.
  • Sprinkle with paprika or additional almonds just before serving.
  • Adjust yogurt accordingly. May need more or less depending on desired consistency.
