Ingredients
- 4 c. cooked chicken, cut into cubes
- 3/4 c. finely diced celery or 2 tsp. celery seed
- 1 1/4 c. seedless grapes, halved
- 1 1/4 c. apples, diced in small cubes with peeling
- 1/3 c. sliced or slivered almonds
- 1 small carton nonfat vanilla yogurt
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1 small can pineapple tidbits
Method
- Cook chicken and cut into small cubes.
- In large mixing bowl combine all ingredients until thoroughly coated with yogurt.
- Use scoop to spoon onto lettuce leaves.
- Sprinkle with paprika or additional almonds just before serving.
- Adjust yogurt accordingly. May need more or less depending on desired consistency.
