Ingredients
- 2 c. all-purpose flour
- 1 1/3 c. sugar
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 c. grated carrots
- 1/2 c. raisins
- 1/2 c. coconut
- 1/2 c. chopped nuts
- 1 (8 oz.) can crushed pineapple
- 1 c. vegetable oil
- 3 eggs
- 2 tsp. vanilla
Method
- Combine first 4 ingredients; stir in carrots and next 4 ingredients.
- Add oil and remaining ingredients.
- Place in baking cups.
- Fill 2/3 full.
- Bake in a 350° oven for 25 minutes or until golden brown.
