Ingredients
- 1 can fruit cocktail
- 6 oz. cream cheese
- 1/2 cup mayonnaise
- 1 Tbsp. grated lemon peel
- 2 cups miniature marshmallows
- 1 cup heavy cream, whipped
- 2 Tbsp. powdered sugar
Method
- Drain cocktail.
- Soften cream cheese and blend with mayonnaise and lemon peel.
- Stir in cocktail and marshmallows. Whip cream with powdered sugar until stiff.
- Fold into fruit mixture.
- Pour into loaf pan lined with waxed paper.
- Freeze until firm.
- Unmold and slice.
- Serve on a bed of lettuce.
- Makes 8 to 10 servings.
