Ingredients

  • 1 can fruit cocktail
  • 6 oz. cream cheese
  • 1/2 cup mayonnaise
  • 1 Tbsp. grated lemon peel
  • 2 cups miniature marshmallows
  • 1 cup heavy cream, whipped
  • 2 Tbsp. powdered sugar

Method

  • Drain cocktail.
  • Soften cream cheese and blend with mayonnaise and lemon peel.
  • Stir in cocktail and marshmallows. Whip cream with powdered sugar until stiff.
  • Fold into fruit mixture.
  • Pour into loaf pan lined with waxed paper.
  • Freeze until firm.
  • Unmold and slice.
  • Serve on a bed of lettuce.
  • Makes 8 to 10 servings.
