Ingredients
- 24 fresh or canned jalapeno peppers
- 1/2 c. yellow cornmeal
- 1 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. oil
- 1 (12 oz.) bottle Texas-style beer
- oil (for frying)
- 4 oz. Cheddar or Monterey Jack cheese, grated
- 1/2 c. flour
Method
- Cut each pepper, making a small slit.
- (If your skin is sensitive to jalapeno oil, wear thin plastic gloves.) Remove the seeds.
- Carefully wash them, keeping the peppers intact.
- Place on a paper towel to drain.
