Ingredients

  • 24 fresh or canned jalapeno peppers
  • 1/2 c. yellow cornmeal
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. oil
  • 1 (12 oz.) bottle Texas-style beer
  • oil (for frying)
  • 4 oz. Cheddar or Monterey Jack cheese, grated
  • 1/2 c. flour

Method

  • Cut each pepper, making a small slit.
  • (If your skin is sensitive to jalapeno oil, wear thin plastic gloves.) Remove the seeds.
  • Carefully wash them, keeping the peppers intact.
  • Place on a paper towel to drain.
