Ingredients

  • 2 strips bacon
  • 1/4 carrot, grated
  • 1 medium onion, chopped
  • 3/4 c. chopped ham or chicken
  • 3 c. cold, cooked rice
  • 2 eggs, scrambled
  • 1/4 green pepper, chopped
  • juice of 1 clove garlic
  • 2 Tbsp. soy sauce
  • salt to taste

Method

  • Fry bacon until crisp.
  • Crumble. Cook carrot and onion in bacon drippings.
  • Remove from pan. Scramble eggs and remove from pan.
  • Fry ham or chicken.
  • Remove from pan. Place rice in pan. Add soy sauce, salt and green pepper. Stir until heated.
  • Add all ingredients. Serve hot with additional soy sauce, if desired.
