Ingredients
- 2 strips bacon
- 1/4 carrot, grated
- 1 medium onion, chopped
- 3/4 c. chopped ham or chicken
- 3 c. cold, cooked rice
- 2 eggs, scrambled
- 1/4 green pepper, chopped
- juice of 1 clove garlic
- 2 Tbsp. soy sauce
- salt to taste
Method
- Fry bacon until crisp.
- Crumble. Cook carrot and onion in bacon drippings.
- Remove from pan. Scramble eggs and remove from pan.
- Fry ham or chicken.
- Remove from pan. Place rice in pan. Add soy sauce, salt and green pepper. Stir until heated.
- Add all ingredients. Serve hot with additional soy sauce, if desired.
