Ingredients

  • 1 (3 lb.) rabbit, cut into serving pieces
  • 1 1/2 tsp. monosodium glutamate
  • 1 tsp. salt
  • pepper to taste
  • garlic powder
  • fat for frying (shortening, bacon grease or peanut oil)
  • 1 large finely chopped onion
  • 1 Tbsp. vinegar
  • 1/2 c. water

Method

  • Let rabbit pieces stand in vinegar brine for 3 hours.
  • Drain, dry and sprinkle m.s.g. evenly on all pieces.
  • Cover and refrigerate overnight.
  • Mix seasonings and sprinkle on meat. Brown in fat or oil.
  • Put onion in casserole.
  • Arrange rabbit on top.
  • Combine vinegar and water and pour over rabbit pieces. Cover and bake at 275° for 2 hours or until tender.
