Ingredients
- 1 (3 lb.) rabbit, cut into serving pieces
- 1 1/2 tsp. monosodium glutamate
- 1 tsp. salt
- pepper to taste
- garlic powder
- fat for frying (shortening, bacon grease or peanut oil)
- 1 large finely chopped onion
- 1 Tbsp. vinegar
- 1/2 c. water
Method
- Let rabbit pieces stand in vinegar brine for 3 hours.
- Drain, dry and sprinkle m.s.g. evenly on all pieces.
- Cover and refrigerate overnight.
- Mix seasonings and sprinkle on meat. Brown in fat or oil.
- Put onion in casserole.
- Arrange rabbit on top.
- Combine vinegar and water and pour over rabbit pieces. Cover and bake at 275° for 2 hours or until tender.
