Ingredients

  • 1 c. peeled, seeded, chopped in 1/2-inch dice tomatoes
  • 1/4 c. thinly sliced green onions
  • 2 Tbsp. 1/4-inch dice green pepper
  • 1 jalapeno pepper, seeded and minced
  • 1 to 2 Tbsp. fresh lime juice
  • 1/2 to 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1 tsp. olive oil or garlic oil
  • 1 to 2 Tbsp. chopped fresh cilantro

Method

  • Stir tomato, onions, green pepper, jalapeno pepper, lime juice, salt, pepper, oil and cilantro together.
  • Let sit for 10 minutes before serving at room temperature.
  • Taste and adjust seasonings.
  • Yield:
