- 1 c. peeled, seeded, chopped in 1/2-inch dice tomatoes
- 1/4 c. thinly sliced green onions
- 2 Tbsp. 1/4-inch dice green pepper
- 1 jalapeno pepper, seeded and minced
- 1 to 2 Tbsp. fresh lime juice
- 1/2 to 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 tsp. olive oil or garlic oil
- 1 to 2 Tbsp. chopped fresh cilantro
Method
- Stir tomato, onions, green pepper, jalapeno pepper, lime juice, salt, pepper, oil and cilantro together.
- Let sit for 10 minutes before serving at room temperature.
- Taste and adjust seasonings.
- Yield:
- 1 cup (2 servings).
