Ingredients

  • 2/3 c. salad oil
  • 1/4 c. wine vinegar with garlic
  • 2 Tbsp. dry white wine
  • 2 tsp. soy sauce
  • 1 tsp. sugar
  • 1 tsp. dry mustard
  • 1 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • dash of Tabasco
  • 2 or 3 c. fresh spinach
  • 5 slices bacon
  • 2 hard-cooked eggs

Method

  • Combine first 9 ingredients in a jar and shake vigorously. Set aside until ready to use.
  • Wash and pat dry spinach; tear into bite sized pieces and place in refrigerator to keep crisp.
  • Fry bacon, drain, let cool and then crumble.
  • Chop hard-cooked eggs. Combine bacon and eggs.
  • Arrange the spinach in a large salad bowl.
  • Pour dressing over spinach leaves and tip with crumbled bacon and chopped eggs.
  • Serves 4 to 6 people.
