Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg, beaten
  • 3 cups fresh corn kernels (about 6 ears fresh corn)
  • 2 tablespoons whipping cream
  • 1 tablespoon butter or margarine, melted
  • Vegetable oil

Method

  • Combine flour, baking powder, and salt in a medium mixing bowl; mix well. Combine egg, corn, whipping cream, and butter; mix well, and stir into dry ingredients.
  • Drop mixture by tablespoonfuls into hot oil (375°); cook until golden brown, turning once. Drain on paper towels; serve hot.
