Ingredients

  • 1 c. unsifted all-purpose flour
  • 2/3 c. yellow corn meal
  • 1/4 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. buttermilk, warmed
  • 1/2 c. (1 stick) butter, melted
  • 1 large egg
  • 1 c. fresh or thawed whole kernel corn
  • 1/2 c. finely chopped sweet green pepper
  • 1 Tbsp. canned green chilies, chopped

Method

  • Heat oven to 350°.
  • Grease a 9-inch round baking pan.
  • In large bowl, combine flour, corn meal, sugar, baking powder, baking soda and salt.
  • In small bowl, combine buttermilk, butter and egg.
