Ingredients
- 6 sweet potatoes
- 3/4 c. water
- 1/2 c. brown sugar
- 3/4 tsp. grated orange rind
- 3/4 tsp. cinnamon
- 1 1/2 Tbsp. butter
- 4 c. cranberries
- 2 c. water
- 1 1/2 c. sugar or less
Method
- In a medium covered saucepan, cook cranberries in water until berries pop (about 10 minutes).
- Add sugar and cook 15 minutes more.
- Chill for later use in recipe.
- Cook, peel and slice sweet potatoes lengthwise.
- Preheat oven to 325°.
- Place sweet potato slices in greased 2-quart casserole.
