- 1 2/3 c. cake flour
- 1 c. sugar
- 3/4 tsp. salt
- 3 1/2 tsp. baking powder
- 1/3 c. shortening
- 1 tsp. vanilla
- 1/2 c. coconut milk
- 1/4 c. sweet milk
- 3 egg whites (unbeaten)
- freshly ground coconut
Method
- Have all ingredients at room temperature.
- Sift flour, measure and resift 3 times, the last time sifting with the sugar, salt and baking powder.
- Add shortening and 1/2 cup of the two milks combined.
- Beat with electric mixer for 2 minutes on low speed. Scrape batter from the sides.
- Add remaining 1/4 cup combined milks, egg whites and vanilla.
- Beat for 2 minutes more.
- Turn into 2 (8-inch) greased and floured cake pans.
- Bake at 350° for 25 minutes.
- Cool for 10 minutes before turning out.
- When cool, spread with icing and sprinkle coconut over the top.
