Ingredients
- 1 1/2 c. salad oil
- 2 c. sugar
- 2 large eggs
- 1 tsp. salt
- 1 tsp. soda
- 2 tsp. baking powder
- 2 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 1 c. chopped pecans
- 3 c. chopped apples
Method
- Prepare apples and set aside.
- Measure salad oil into large bowl.
- Add sugar and eggs and beat on low speed of mixer until creamy.
- Sift flour and measure.
- Sift again with salt, soda and baking powder.
- Add flour mixture a little at a time and beat well.
- Fold in apples, pecans and vanilla.
- Batter will be stiff. Spread evenly in a greased and floured 9 x 12-inch pan and bake at 350° for 50 to 60 minutes.
- Can be served plain or with whipped topping.
