Ingredients

  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 2 large eggs
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 2 1/2 c. all-purpose flour
  • 1 c. chopped pecans
  • 3 c. chopped apples

Method

  • Prepare apples and set aside.
  • Measure salad oil into large bowl.
  • Add sugar and eggs and beat on low speed of mixer until creamy.
  • Sift flour and measure.
  • Sift again with salt, soda and baking powder.
  • Add flour mixture a little at a time and beat well.
  • Fold in apples, pecans and vanilla.
  • Batter will be stiff. Spread evenly in a greased and floured 9 x 12-inch pan and bake at 350° for 50 to 60 minutes.
  • Can be served plain or with whipped topping.
